INGREDIENTS (QTY: 9 CUPCAKES)
- 1 1/4 cup whole wheat flour
- 2 tsp baking powder
- 1/4 cup coconut oil
- 1/2 cup greek yogurt
- 2 eggs
- 1 cup blueberries, halved*
BLUEBERRY CREAM CHEESE FROSTING
- 8oz cream cheese (substitute with greek yogurt if you'd like)
- 1 tbsp maple syrup (optional - make sure to use real maple syrup as others may have sweeteners that can be harmful to dogs)
- 1/2 cup blueberries
INSTRUCTIONS
- Preheat oven to 350°F
- Line a cupcake pan with cupcake liners
- Add the whole wheat flour and baking powder to the bowl of an electric mixer fitted with blade attachment, mix
- Add the coconut oil and greek yogurt, mix until just fully combined
- Add eggs 1 at a time, beat
- Fold in the blueberries
- Spoon the batter into the cupcake liners
- Bake for 15-18 minutes
- Allow to cool completely before frosting
BLUEBERRY CREAM CHEESE FROSTING
- Add the cream cheese to the bowl of an electric mixer fitted with blade attachment, beat on high until smooth
- Add the maple syrup, continue to beat
- Add the blueberries, beat on high until the blueberries break up and incorporate into the frosting
- Use a piping bag to pipe the frosting onto each cupcake or spread it on with a knife
