To celebrate National Peanut Butter Lover’s Day, here’s a recipe that quick, easy and pup approved!
INGREDIENTS:
- 2/3 cup pumpkin puree (avoid any fillers such as "pumpkin pie filling", which contain a lot of sugar)
- 1/4 cup peanut butter
- 2 large eggs
- 2 1/2 – 3 cups whole wheat flour
WHAT YOU'LL NEED:
- Parchment paper or silicone baking mat
- Baking sheet
- Medium size bowl
- Electric mixer or whisk
- Rolling pin
- Flour for counter top
- Cookie cutters (optional)
DIRECTIONS:
- Preheat oven to 350 degrees F
- Line a baking sheet with parchment paper or a silicone baking mat then set aside
- In your medium sized bowl, use your electric mixer or whisk to combine beat pumpkin puree, peanut butter and eggs until well combined (about 1-2 minutes or 30 whisks)
- Gradually add 2 1/2 cups flour at low speed until incorporated
- Add an additional 1/4 cup flour at a time just until the dough is no longer sticky
- Lightly flour your working surface, knead the dough 3-4 times until it comes together
- Using a rolling pin, roll the dough to 1/4-inch thickness
- Use cookie cutters or cut out desired shapes and place onto the prepared baking sheet
- Place into oven and bake until the edges are golden brown, about 20-25 minutes
- Let cool completely
- Treat your pup!
